Ingredientes:

  • 1 taza de quinoa
  • 2 tazas de agua
  • 1 aguacate maduro
  • 2 tomates medianos
  • 1 pepino
  • 1/4 de taza de cebolla roja picada
  • 1/4 de taza de cilantro fresco picado
  • 2 limones
  • 2 cucharadas de aceite de oliva
  • Sal y pimienta al gusto

Instrucciones:

  1. Enjuaga la quinoa bajo agua fría para eliminar su sabor amargo. Coloca la quinoa en una cacerola con 2 tazas de agua y una pizca de sal. Lleva a ebullición, luego reduce el fuego y cocina a fuego lento durante unos 15-20 minutos, o hasta que la quinoa esté tierna y haya absorbido el agua. Deja enfriar.

  2. Mientras se cocina la quinoa, pica el aguacate, los tomates, el pepino y la cebolla roja en cubos pequeños. Pica finamente el cilantro.

  3. En un tazón grande, mezcla la quinoa fría con los vegetales picados y el cilantro.

  4. Exprime el jugo de los limones y mézclalo con el aceite de oliva, sal y pimienta al gusto. Vierte el aderezo sobre la ensalada y mezcla bien para que todos los ingredientes queden bien combinados.

  5. Puedes guardar la ensalada en un recipiente hermético en el refrigerador hasta que estés listo para llevártela al trabajo al día siguiente.
